CROCK POT PORK AND GRAVY


Ingredients:


4-5 pork shoulder chops
1 pkg. Lipton onion soup mix
1 can cream of chicken soup
10 oz. water


Directions:


1. Trim pork chops of excess fat and cut into "stew size" pieces. Lightly brown and place in bottom of crock pot.


2. Combine remaining ingredients and pour over pork. Cook 4-6 hours on low until tender.


3. Serve over rice or with mashed potatoes.

Coconut Poke Cake
1 (18.25-ounce) package white cake mix
1 (16-ounce) can coconut milk
1 (14-ounce) can sweetened condensed milk
1 (16-ounce) container whipped topping
1 (8-ounce) bag sweetened flaked coconut...you can color it for Easter or Spring
Prepare and bake white cake mix according to package directions in a 13 x 9 x 2-inch baking pan.
Remove cake from oven and while still Hot, using a utility, fork poke holes all over top of the cake.
Mix coconut milk and sweetened condensed milk together. Pour over the Hot cake. Cool completely then frost with the whipped topping and sprinkle with the flaked coconut. Cover and store in refrigerator.
Makes 12 servings.

Jessica, Thanks for the oyster stew recipe, my mom used to make that when I was growing up.

OYSTER STEW

4 tbsp. butter
1/2 tsp. finely grated onion
1 pt. oysters with liquid
2 c. half & half
1 tsp. Worcestershire sauce
1/2 tsp. salt
1/8 tsp. white pepper

In a double boiler, saute onions in 3 tablespoons butter until soft, add remaining ingredients except half & half until the edge of the oysters start to curl. Add half & half and cook slowly until soup is hot and oysters are floating. Do NOT allow the stew to boil.

Gale here's another yummy creamsicle recipe...
Creamsicle Pie

1 graham cracker crust or any crust that you like
14 ounces sweetened condensed milk
4 egg yolks
1/2 cup orange juice
1 tablespoon grated orange rind
3 ounces softened cream cheese
1/3 cup powdered sugar
1/4 cup sour cream
1/4 teaspoon vanilla extract

Mix sweetened condensed milk, egg yolks, orange juice and grated
orange rind (I used fresh). Pour into a graham cracker crust. (I use
store bought)
Bake in a preheated 325 degree oven for 35 minutes (like a typical
cheesecake, check with a knife or toothpick).
Mix softened cream cheese, powdered sugar, sour cream, and vanilla
extract together until smooth.
When pie is done, remove from oven and top the pie with the other mixture.
Return the pie to the oven and bake for 10 more minutes.
Cool. Serve chilled. Serves 6 to 8.

STREUSEL - FILLED COFFEE CAKE

1/2 c. brown sugar
2 tbsp. flour
2 tsp. cinnamon
2 tbsp. melted butter
1/2 c. chopped nuts

COFFEE CAKE:

1 1/2 c. sifted flour
3 tsp. baking powder
1/4 tsp. salt
3/4 c. sugar
1/4 c. shortening
1 egg
1/2 c. milk
1 tsp. vanilla

FILLING: Mix sugar, flour and cinnamon. Blend in the melted butter and stir in chopped nuts.

BATTER: Sift flour, baking powder, salt and sugar together. Cut in shortening until mixture is like fine cornmeal. Blend in well-beaten egg mixed with milk and vanilla. Beat just enough to mix well. Pour one-half the batter into well- greased and floured 8 x 8 inch pan. Sprinkle half the streusel mixture; repeat.

Bake at 375 degrees for 25 to 30 minutes.

CHOCOLATE OATMEAL DROP COOKIES

1/2 c. milk
2 c. sugar
1 stick butter
4 tbsp. cocoa

Bring to a boil for 1 minute, remove from heat and add:

1/2 c. peanut butter
3 c. oatmeal
