I tend to cook a lot of chicken. My husband gets sick of it. This recipe is his absolute favorite.
uncooked chicken breast tenders. (chicken breast cut in strips)
1/4 cup low fat mayo
1 Tbs of dijon mustard
1 tsp of pepper
Mix ingredients together. Coat chicken breast. Refrigerate for at least an hour.
Place coated chicken breast in a baking dish and bake until done.
Great served with pasta or rice side dish and garlic bread.

Dawn I guess it's not just me...I'm having trouble with comp. too..really slow, and I think I'll just get off a while. cute, love The Garfield....and the crockpot recipe sounds yummy too, Sandi, I haven't met you yet, but looking forward to it. When the network gets over the "hiccups"...

This is a very easy and delicious meal for the crock pot or put in oven, whatever you choose. Put 2 - 4 frozen chicken breasts in a crock pot, add one 15 oz jar of salsa, one can of drained and rinsed black beans, a can of drained corn, or frozen, a couple of handfulls. Sit back and relax and let her go. About 5 min. before serving add about 4 oz. of cream cheese, I use lowfat. When it is melted just stir it all together. Good served over rice.

Okay, this is our old Standby favorite, it'll cure what ailes you:
S.O.S.
Use any ground meat, about a pound, or less
Brown well, and drain off excess grease
add about a cup of water, and chopped onion, stir, and cook until onions translucent, and tender.
Take off the heat, and sprinkle about 1/2 cup of flour over meat, once water is cooked down...you may want to add about 1/2 stick or 4 Tblspn. of butter or marg. Mix the flour into the meat, and cook some more...about 5 minutes to cook the flour. Also add some salt and pepper to taste at this time...maybe a little garlic, or garlic powder...
You may need to scrape the bottom of pan, or skillet, once the flour starts to cook...then take off the heat, pour in about a cup of milk and stir up before putting back on the heat, if it needs more milk, you will be able to tell when it starts cooking again, it'll thicken. This is a cook by "the feel" approach...
If you like mushrooms you can add those too...fresh, or canned...
A very quick way to do this, is using good old Mushroom soup, and just add some milk to thin it to what you like,
When finished, serve on toasted bread, or Rice, or noodles...or biscuits...my favorite thing.
If I left anything out, it wasn't on purpose. Good eating!!
